About the Project

Tom's PhD project aims to identify key quality attributes of half shell Australian Oysters using microbial and biochemical indicators. This information will then be used to evaluate quality in current supply chain practices and novel shelf life extension and processing
technologies such as Cells Alive System (CAS), High Pressure Processing (HPP), thermal processing, etc.

Tom's project differs from PhD student Judith Fernandez's (from the University of Tasmania) as it will specifically pertain to half shell product with a focus on applied techniques for increasing the shelf-life of product and assessing the impact of these techniques on eating quality.
